Necessity is the motherhood of Invention

My traditional eggs Benedict
I try to use fresh artisan bread in my eggs Benedict. I have experimented with all types. Sometimes they work. Sometimes-- like today --what was so light and beautiful in the store turns rock hard in a day. Sans crust it is not substantial enough to serve. Panic sets in as I look in my pantry and plan on switching gears . It ends with a tall, decadent stack of roasted sweet potato chips, organic tomato,ham, poached eggs and avocado topped off with a savory hollandaise. Creamy, rich goodness!
